Easy Street Tacos Made Right At Home

Image: Street Tacos: One thing I know is I love a street taco that comes straight from a drive-by food truck. Yes, and in Dallas, you can find one on almost every corner. When I have the time, I love to sit in my car and eat at least three tacos stuffed with meat, tomatoes and lots of onions. Since it is pouring down this whole weekend, I've decided to bring my version of the street tacos to my home tonight for dinner. Well, I will attempt to make them for our family movie night.

In a large skillet, I use three tablespoons of butter, and I add garlic, pepper, and other seasonings. We love peppers, so I cut up lots of red, yellow and green bell peppers. That is (optional). I add a small number of chopped onions. Side Note: The more raw vegetables I add to my tacos the more it stretches to feed my family.

This is the easiest recipe on the planet, and it is perfect for a rainy weekend. The next step is I place my corn tortillas in the oven on a pan until hot and lightly crispy. I chop up all my tomatoes, and I love to use a crunchy already cut up salad mix. My favorite one is the coleslaw shred.

After my shrimp has cooked around 4-5 minutes, I spread the guacamole sauce on first then add, shrimp and all the trimmings. With this dish, I love adding a side of fire roasted corn and refried beans.
