 I know we are in full swing of the weather feeling wintery with a hint of chill in the air. But I must admit I am not ready just yet to let go of my fall drinks and crisp winds blowing about our back yard.

 I guess you can say I am one lady who loves the cooler days and falling orange leaves all year round. As a matter of fact, I miss those days of having warm soups that my grandma made for the family. She always fixed us her famous burnt cheese toast with ham squeezed between two pieces of buttery white bread.

Yep, those were the good ole'days mixed with food, laughter, and lots of joy.

Oh, how I remember how granny would grab a thick slice of white bread, piled with butter and thick American cheese. Then she would toss it on a hot griddle and let it melt until it became all gooey and chewy.

As I got older, I wanted to add other things to my sandwiches, such as pickles, bacon, onions, tomatoes, and honey mustard.

But, Yall know my granny wasn't having it because it was all about making good food quickly.

And I understand that, but I can't resist making the same meal for my family but with a twist.

 My recipe is super easy. First, cut up one ripe tomato and one crisp apple. Yes, I love apples pressed into my cheese toast. #sogood

Then I use seasoned shredded cheese, this step gives my sandwich a gooey texture. #love

Before everything melts, I pile on the bacon, tomato, and apple slices.

One of my favorite things to pair my sandwich with is a hot bowl of tomato soup. When it comes to soups, I love to add bacon bits, sour cream, and dried tomatoes on top.

Honestly, when I want comfort food, this is my favorite go-to dish.

In conclusion: This may have been a recipe that I tweaked from my granny's recipe box.

But, I never steer far from the tradition that has kept my belly full for years to come. Now I am fixing this same country meal for my family. Honestly, it is quick, easy, and it only takes 30 minutes to prepare and get to the table. When it gets cold outside, I keep my cabinets filled with grab and go soups. My grandmother taught me a long time ago how to make quick soups and pairing them with a simple sandwich.

And that is where I am in life at the moment, making my life easier. There you have it, my twist on a Fall tomato soup and sandwich.
