It's the weekend, so I thought I would pop on the blog and share our favorite weekend pancakes and shrimp tradition. There is something about being raised up in the south of Louisiana, we eat shrimp and fried fish with everything. Not to mention, during crawfish season, it's on all summer long. But, today, I am going to share one of my favorite back yard country girl traditions. 
I was almost ashamed to share such a thing, but then I realized this recipe is apart of my country girl roots. 
So there will be no shame over here. :)

When I was a small teenager, it was not uncommon to have shrimp and grits for breakfast, lunch, and dinner. Then my family started fixing shrimp with everything such as sweet potatoes hash and eggs, pizza, and tacos. Yes, I learned at a very young age how to eat shrimp 10.000 ways and counting.

 As time has gone by from my childhood. I am now trying to carry some of my shrimp traditions into my own family life. Although, I must admit it wasn't easy convincing my daughters that salty seasoned shrimp really goes well with a sweet and savory breakfast. It took me several times to make pancakes and shrimp to win them over. I can't tell Yall the times my girls wanted to make a shrimp po boy sandwich and eat the pancakes by themselves. Although there is nothing wrong with that, I just think they need to try a new way of eating my favorite fried food, which happens to be shrimp.

 Nonetheless, after a few times, I finally won my household over one by one. Now, as of this weekend, it seems to be everyone's favorite meal that I make. Besides, making this dish gives a different taste than the same old bland grits eggs and bacon. So, if you ever want to spice up your morning eating, try making this for your loved ones. And, watch how fast they will gobble everything all up in a flash.

Trust me, when I say this recipe is so easy at it only takes less than 40 minutes to give or take a few seconds.

Recipe Deets:

You can make your pancakes from scratch or grab a box of complete mix add water and pour on a skillet. That is what I chose to do because I prefer quick and fast. :)

You can buy and peel your shrimp or buy the large pre-frozen ones. Today I am using the pre-peeled, cleaned, and deveined ones in a bag. Yes, they taste mighty fine to me. I use a little seasoned fish fry and fry for about three to five minutes. #cookuntildone

Then scramble hard fry or sunny side up some eggs. 

After I cook all of that, I allow everyone to make their plates the way they like it.

I love to add whip cream and pecans with hot syrup on my pancakes. No matter how I top it, shrimp and pancakes with a side of eggs are always so yummy.

I know it is a country meal, but it sure does bring laughter and the joy of eating together as a family.

And to me, that is what life is all about food, fun, good eats, and laughter in my kitchen.
