 I am on my 10,000th instant cooked meal since being in quartine with my family.  YaYaYabadaBoom!
So, I think it is about time



I toot my own horn. And share my most famous floating eggs that make all my instant meals a big ole' country hit.

Hold up before I get any judgments for cooking processed foods for my family. Don't forget we are in isolation, and I've cooked everything every day except oxtails and yellow corn grits.

Honey, I love mixing flour, sugar, and eggs when making homemade pancakes and biscuits. But after being in isolation for the last 36 days, my family better be glad to get whatever I slide across our kitchen table.

 As of this morning, I have mastered how to make a quick meal in under 45 minutes. Yeah, I know Betty Crocker can do it in 5, but I ain't Betty. Besides, I am quitting my mommy and wifey role as soon as I am set free from house arrest.

Ok, now that I have gotten rid of all my mom's guilt of cooking foods from scratch. I guess I can now share my hot muffins and floating egg scramble recipe. Believe it or not, I did cook all of this morning's breakfast with love.

So, on that note, I grabbed myself two packs of blueberry instant muffin mixes. The best part is I only spent .98 on each package. Now chile, I gotta toot my horn for such cheap savings.

All I used was one cup of milk to two packages of Martha's blueberry muffin mix.

I then filled twelve cupcake holders and placed them in my dollar tree cupcake pan. Bake in the oven for at least 15 to 17 minutes.

Now here comes the best part of this whole breakfast. My favorite thing to make is my famous floating egg scramble. First, cook down one sausage roll, then add 7 raw eggs and scramble. Add a little salt, pepper, and garlic if that's what you like.

According to the picture above, all my berries went to the bottom of my muffins. But, they were extra soft and fluffy. And with a side of hash browns and orange juice, this instant breakfast was a hit.

In conclusion: Life has a funny way of showing us different ways to mix and match our foods. I am always looking for ways to spice things up even if I do not cook everything from scratch. Lately, I just want to spread love and make my family feel full and happy. Once I took the pressure off myself of cooking breakfast, lunch, and dinner. I found it easy and ok to serve up something instant and yummy.

Things in life have changed from around the world, and I think it's ok for us as parents to lay our guards down. Since I've been cooking so much for my family, They have been giving me lots of hugs, kisses and thank you's. So, I think it's ok for me to toot my own horn because I have mastered how to cook what's in my kitchen. Toot-Toot:)

Being in isolation has taught me a lot about love, food, family, and laughter.
