When You Go Into The Kitchen And Cook Something Crunchy And Simple!
OMG, the struggle is getting real. :)


I do not know about you all, but I am getting tired of cooking and almost tired of eating. When can we go back outside and play again? LOL, just kidding, I just need a good laugh, and I hope my morning babbles give you a small bit of that at the moment.

Anyhoot, I have been baking and shaking in my kitchen for the last few weeks. Ya'll, I've been cooking meals that could possibly feed an army or at least the navy seals. 

I will not complain about having backed chicken, roast, greens, cornbread, sweet potatoes, yams, and homemade banana pudding. Yes, seriously, I have been cooking as if the world is about to sail away. 

Not to mention, breakfast has also been a real feast around my neck of the woods, with grits, bacon, pancakes, eggs, and orange juice. Can we say #foodcoma :)

Oh, and I must not leave out all the late-night snacking we are doing, popcorn, double stuff cookies, brownies, and chips with dip.

SideNote: I am not complaining because it has bought my family and me closer while enjoying long movie nights. 

So, last night I wanted to cook/fry something simple yet yummy with a whole lotta crunchy going on.

Now Ya'll knows I am a southern fried country gal with a back yard flare.

I am one to admit I love seafood, and when I can get my hands on some, I want it fried and laid to the side with french fries, coleslaw, pickles, corn on the cob, and a piece of toast.

Yep, that's how I want it when I order in from a local restaurant in my city.

Since I am not close to any seafood place at the moment, I will be frying my fish and shrimp right here at home.

First, the seasoning mixture: I use plain fish fry so I can add garlic salt and powder, parsley, black and red pepper, onion powder, and old bay.

I use this same mixture when frying my shrimp as well. 

After I batter up all my fish, I then deep fry about 6 pieces at a time. Since we love extra crispy catfish, I usually cook around 15 to 20 minutes.

When it comes to frying shrimp, it only takes around 5 to 6 minutes, depending on how hot my oil is at the time. Nonetheless, the crunch levels depend on my mood for the evening.

Lastly, I have to have a heaping pile of seasoned french fries. You know the ones that come from the frozen section at the grocery store. Yep, those are just fine when I want a quick and straightforward meal at home.

Inconclusion: I realize my family doesn't really care what I fix for dinner as long as it tastes good. Although last night's dinner doesn't look pretty enough to place on Instagram, it sure was good.
The best part is when I saw my entire family licking and smacking on their fingers. Yep, my fried fish and shrimp were finger-licking good might I say myself.
I may be on the fence about all this cooking I have to do. But, I am sure happy how these isolated meals have bought the family and me together. For one common cause and that is enjoying laughter, good food, and each other's company. Things do not have to be perfect for a family to gather in the kitchen for some good ole' simple cooking.

Life is too short not to be enjoying whatever is happening. Yes, I am ready to get back to my normal life of working and getting outside. But, I am learning quickly to enjoy my new normal cooped up in my home with the ones I love the most.

  1. Hey that’s funny because I always go in the kitchen looking for something crunchy lol but is never able to find anything. This is a great alternative I could use whenever I get my creativity flowing !!
